This is my latest obsession, Mediterranean Cucumber Salad. It is quick, refreshing and it goes well with just about any meal. Made with simple ingredients like cucumber, tomato, onion, bell pepper and lemon, this is a very easy salad to throw together.

I love having something fresh to snack on or make a meal out of with zero guilt of eating it.  And there is ZERO guilt if I eat the whole bowl… I’m just saying.

There are many versions of this traditional salad out there, and I hope you enjoy my take on it.

Glass Mixing Bowl

Wooden Mixing Spoon

Knife

Food Chopper (optional)

Lemon Juicer (optional)

Ingredients You Will Need for this Mediterranean Cucumber Salad

English Cucumber

Roma Tomato

Red or Yellow Onion

Bell Peppers

Lemon

Salt – I love this Celtic Salt!

Olive Oil – I love the ones from Thrive Market. You want a good quality olive oil that you like the taste of.

How to Make this Mediterranean Cucumber Salad 

Step 1: Dice your ingredients.

What makes this salad amazing is to take the time to fine dice all of the ingredients. You can do this with a knife of course but I also love using a food chopper like this too. You want to make sure all of the pieces are tiny and similar size so you get everything mixed up in one bite. As you chop everything, add it all to the mixing bowl.

This is the step where you can adjust the amount of onion you use. Some like more and some like less so you do you and adjust to your preference.

Step 2: Juice the lemon.

You can either just slice the lemon in half and squeeze out all of the juice making sure to catch any seeds or you can use a juicer. You just want to juice the whole lemon directly into the bowl over the diced veggies.

Step 3: Add your olive oil and salt.

To finish it up add your olive oil and salt to the bowl and mix well.

How to serve Mediterranean Cucumber Salad

This salad is very versatile. You can eat it in so many different ways.

It is amazing just by itself, as a salad.

Pita chips or tortilla chips make a great addition to turn it into a yummy fresh dip. 

You can also serve it with scrambled eggs as a fresh twist to your breakfast. 

It pretty much pairs well with just about anything off the grill, steaks, chicken, burgers, brats and/or hot dogs. It adds the perfect pop of freshness!

Store this in an airtight container in the refrigerator.

Does it matter what color bell pepper I use?

Nope, use whichever color you prefer to eat.

Mediterranean Cucumber Salad

Ingredients

  • 1 whole English Cucumber
  • 2 Bell Peppers
  • 3 Roma Tomatoes
  • 1/2 - 3/4 red or yellow onion
  • 1 tsp. Celtic or French Grey Salt
  • Juice of one whole lemon
  • 1/4 cup of olive oil

Instructions

  1. Dice your veggies tiny and add to your bowl.
  2. Add in your lemon juice, salt and olive oil.
  3. Mix well and enjoy!

Notes

Be sure not to skip the dice your veggies small step. It is worth the time and makes all the difference in the texture of this salad.
