Triple Chocolate Protein Muffins. Need I say more? These fluffy, chocolatey muffins are packed with three different types of chocolate and multiple different types of protein, making these a great quick grab treat any time of the day. You can serve these warm, right out of the oven or make ahead and serve at room temperature. They are amazing regardless.

I love having something easy and quick, especially in the mornings when I don’t have time to make a big breakfast. These are a great grab and go and are rich and filling. My kiddos are my biggest critics. They will definitely tell me if they don’t like something or if I need to tweak a recipe. These were requested twice in one day so I considered them a success!

I also created this recipe to cut the sugar content in half of a lot of traditional recipes. You can still have an amazing, tasty, chocolatey treat without all of the added sugar that is typically used.

I don’t know about you but I also just love chocolate. One of these muffins, warmed with a glass of milk definitely hits the spot when you want a treat.

Tools You Will Need

Mixing Bowl 

Dough Hook or Wooden Spoon– Everyone needs a dough hook in their kitchen!

Measuring Cups and Measuring Spoons

Muffin Scoop

Stainless Steel Muffin Tins

Muffin Liners (if needed)

Ingredients You Will Need

All-purpose flour – All you need is your favorite white flour. This is a great, clean flour.

Raw Cane Sugar

Cacao Powder

Baking Powder – This will help give the bread rise. This is a good aluminum free option.

Baking Soda

Salt – This adds flavor. This is one of my favorites!

Collagen or Protein Powder

Eggs

Dark Chocolate Chips

Mini Chocolate Chips

Avocado Oil

Full Fat Yogurt

Whole Milk

Vanilla Bean Paste or Vanilla Extract

Here are the details on how to make these.

Step 1: Combine the dry ingredients into a bowl.

Add in cacao, baking powder, baking soda, salt, flour, collagen powder, protein powder and your choice of chocolate chips into a bowl and whisk together well.

Step 2: Combine the wet ingredients into a bowl.

Combine your sugar, yogurt, vanilla, avocado oil, whole milk and eggs into a bowl, in any order and whisk well.

Step 3: Combine the wet and dry ingredients together.

Pour your dry ingredients into your wet ingredients and mix well.

Step 4: Scoop and Bake.

Use a muffin scoop to scoop the batter into a prepared muffin tin. Bake at 350 for 18-20 minutes or until you can insert a tooth pick and it comes out clean.

These are going to be so good! Go ahead, enjoy one straight from the oven, the chocolate chips will be melty and so yummy!

Questions?

Can I used a different type of chocolate chip?

Definitely, use what you like. I prefer a dark chocolate and mini semi sweet but you can definitely switch this up and make it your own with what you like.

Do these store good?

Yes. You can store in an airtight container for a couple of days. If you like them warm, you can pop them in the microwave too for 10-15 seconds to warm them up.

Ingredients

  • 2/3 cup raw cane sugar
  • 3/4 cup full fat yogurt
  • 1 tsp. vanilla or vanilla bean paste
  • 1/2 cup avocado oil
  • 1/2 cup whole milk
  • 2 eggs
  • 1/2 cup cacao powder
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup collagen powder
  • 1 scoop protein powder
  • 2 cups of all purpose flour
  • 1 cup dark chocolate chips
  • 1/2 cup mini semi sweet chocolate chips

Instructions

Preheat your oven to 350 degrees.

1. Add in cacao, baking powder, baking soda, salt, flour, collagen powder, protein powder and your choice of chocolate chips into a bowl and whisk together well.

2. Combine your sugar, yogurt, vanilla, avocado oil, whole milk and eggs into a bowl, in any order and whisk well.

3. Pour your dry ingredients into your wet ingredients and mix well.

4. Use a muffin scoop to scoop the batter into a prepared muffin tin. Bake at 350 for 18-20 minutes or until you can insert a tooth pick and it comes out clean.

5. Enjoy!!! You can let them cool or enjoy them warm from the oven.
