Simple Homemade Fluffy Waffles

This Simple Homemade Fluffy Waffle Recipe is just that, simple. Using simple ingredients, it is easy to put together and is a winner for everyone! They are lightly crispy on the outside and soft and fluffy on the inside!

This fluffy and crispy waffle (we are covering the best of both worlds here) is always best when covered in real butter and real maple syrup. If you don’t like following the norm though, one of my favorite ways to eat it is slathered with peanut butter and real maple syrup. Oh and don’t forget the side of bacon or sausage!

What Ingredients are needed to make these Simple Homemade Fluffy Waffles?

Simple ones! Most you probably have on hand but if not, all are easy to find. I order quite a few of my items from Thrive Market. Raw Honey or Raw Sugar

Avocado Oil

Salt – Use good quality salt, one that has minerals still present. Celtic or Redmond are great options. 

Eggs

Vanilla Bean Paste or Vanilla Extract

Baking Powder – Make sure you have Aluminum Free

Baking Soda

Milk

Flour (It is better to use either a whole grain or unbleached flour.) The Turkey Blend is my favorite flour. I have used this one for years!

Butter/Coconut Oil/Avocado Oil/Avocado Oil Spray – for prepping iron

Protein Powder – (optional)

Mix Ins – Blueberries, Chocolate Chips, Pecans, etc… (optional)

Dough Hook or Wooden Spoon – Everyone needs a dough hook in their kitchen!

Measuring Cups and Measuring Spoons

Cupcake or Muffin Scoop (optional)

Waffle Iron

How To Make Simple Homemade Fluffy Waffles

FIRST

Add your raw honey or raw sugar, eggs, baking powder, baking soda, salt and vanilla to a mixing bowl, mix well.

NEXT

Add in your avocado oil and milk and combine.

THEN

Toss in your flour, and protein powder and mix well. Don’t be afraid of lumps, they are ok.

LAST

Go ahead and add in any mix ins if you’d like those and combine gently. 

OR…

To be honest, this is a forgiving recipe, you can toss everything in a bowl (still adding the flour last) and mix. That is why I love this one for kids.

Now it’s time to cook your homemade fluffy waffles!

Add your choice of coconut oil, avocado oil, butter or spray to your waffle iron. Most irons will let you know whey they are ready. If not, let it heat for about 30 to 60 seconds to make sure it has heated up.

Then, add in your scoop of batter leaving room for spreading (the size you make will depend on preference and size of your iron.) I like just using a muffin scoop or the scoop that came with my iron. Remember, it may not look too full but it WILL spread out.

Now don’t touch them. Just watch and wait. Again, most waffle irons will indicate when the waffle is done. The outside should be a nice golden brown, leaving the inside fluffy.

Top with your favorite syrup or toppings and enjoy!

How many Waffles does this recipe make? 

With the size I do, it makes around 6 waffles.

Can you freeze these?

Yes! They are great to make ahead, freeze and then pop in the toaster for an easy reheat. Note: Place a layer of parchment paper in between to prevent them from freezing together.

What’s the best fat to spray the waffle iron with?

I prefer an coconut oil or avocado oil spray. You can use whatever you have on hand. These just make life easy.

How do I store leftovers?

You can store leftovers in an airtight container in the fridge or freezer.

Ingredients

  • 1/4 cup raw sugar or honey
  • 2 eggs
  • 2 tsp. vanilla extract or vanilla bean paste
  • 1/4 tsp. celtic salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 3/4 cup whole milk
  • 1/4 cup melted coconut oil or avocado oil
  • 2 cups of AP flour
  • 1 scoop of vanilla protein powder (optional)
  • Add Ins (optional): Pecans, Berries, Choclate Chips

Instructions

  1. Preheat your waffle maker.
  2. Whisk together your sugar or honey, eggs, salt and vanilla.
  3. Add in your baking soda, baking powder and milk, whisk well.
  4. Add in your coconut or avocado oil. NOTE: If you are using coconut oil, it is important to add this warm (not hot) to the mixture. If you add the cold milk to the warm coconut oil it can cause it to re-solidify making it hard to incorporate together. Trust me...
  5. Add in your flour and protein powder if using. Whisk together. Lumps are ok, it doesn't have to be perfectly smooth.
  6. If you are using add ins, they come last, mix well.
  7. Spray or prep your waffle iron with your chosen type of fat.
  8. Add your waffle batter to your iron and let it do it's thing.

When they are done, top with syrup, fruit, or whatever floats your boat and enjoy!
