What ingredients are needed to make these Easy Banana Nut Muffins?

Simple ones! Like I said, I love using the basic ingredients. Most you probably have on hand but if not, all are easy to find. I order quite a few of my items from Thrive Market. Coconut Sugar

Large Ripe Bananas

Cinnamon

Avocado Oil

Salt – Use good quality salt, one that has minerals still present. Celtic or Redmond are great options. 

Eggs

Vanilla Bean Paste or Vanilla Extract

Baking Powder– Make sure you have Aluminum Free

Baking Soda

Flour (It is better to use either a whole grain or unbleached flour.) The Turkey Blend is my favorite flour. I have used this one for years!

Mix Ins – Walnuts, Pecans, Blueberries, Chocolate Chips, etc… (optional)

How to make Easy Banana Nut Muffins

FIRST

Mash your bananas and coconut sugar with the back of a fork. At least that is how I do it.

NEXT

Add in your egg, vanilla, salt, baking powder, baking soda, cinnamon and melted coconut or avocado oil. Mix well.

THEN

Add in your flour and nuts (optional) and mix until combined.

LAST

If you’d like to add in any other add ins, this is the time to mix them in.

To be honest, this is a forgiving recipe, you can toss everything in a bowl (still adding the flour last) and mix. Just be sure the bananas are mashed up. That is why I love this recipe for kids to help make. 

Now it’s time to bake your Banana Nut Muffins!

Prep your muffin pan with either coconut or avocado oil or line them with muffin liners. 

Then, add in your scoop of batter. I like using a muffin scoop for ease but you can use two spoons too! Remember, don’t overfill because these will fluff up!

How many Muffins does this recipe make? 

With the size I do, it makes around 10 muffins.

Can you freeze these?

These have never lasted long enough to make it to the freezer. I would think freezing these though would change the texture and cause them to get gummy. I would say these are best made fresh.

What’s the best fat to prep the muffin tin with?

I prefer a coconut oil or avocado oil spray. You can use whatever you have on hand. These liners just make life easy.

How do I store leftovers?

You can store leftovers in an airtight container on the counter for a day. Any longer place in the fridge.

Easy Banana Nut Muffins

Ingredients

  • 3 large bananas
  • 1/3 cup coconut sugar
  • 1 egg
  • 2 tbsp. avocado oil
  • 1/2 tsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 1/2 cup flour
  • 1/3 cup chopped nuts
  • 1/3 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350 degrees.
  2. Mash your bananas and coconut sugar together with a back of a fork.
  3. Add in your egg, avocado oil, vanilla, salt, baking powder, baking soda and cinnamon. Mix well.
  4. Add in your flour and nuts (optional) and mix until combined.
  5. If you'd like any other add ins like chocolate chips, this is the time to mix them in.
  6. Fill your muffin tins to about 1/2 to 1/3 full.
  7. Sprinkle with nuts if you'd like.
  8. Bake at 350 degrees for 12 - 15 minutes.
  9. Enjoy!!!
