Oven Roasted Potatoes are one of our favorite side dishes around here! They are super simple and go with so many things.
We eat them for dinner very often, but we also love them for breakfast too!
One ingredient with some spices and a good avocado or olive oil and ta-da! You have yourself a versatile side dish for any night!

What ingredients are needed to make these Oven Roasted Potatoes?
Potatoes.
That’s all.
Ok, you will need some spices too and either avocado or olive oil, but really, just potatoes for your main ingredient.
Yellow potatoes are my favorite to use for this, but red potatoes would work great too! I don’t like to peel potatoes if I don’t have to.

So, here is all you will need.
Yellow Potatoes (or red)
Avocado Oil
Garlic Powder
Onion Powder
Dried Parsley
Celtic Salt (or your favorite salt)

How to make these Oven Roasted Potatoes:
Step 1
Preheat your oven to 400 degrees.
Step 2
Dice your yellow potatoes.
Step 3
Drizzle half your oil of choice on your sheet pan. Spread your potatoes out evenly on your pan in a single layer and then drizzle a little more oil on top.
Step 4
Bake for about 20 minutes.
Step 5
Add your spices and salt and pepper to your potatoes and toss to mix.
Step 6
Continue baking until cooked though. This will all depend on the size of your potatoes but they should bake for about another 20 minutes or so until they are fork tender.

- 8 cups of diced yellow potatoes
- 1/4 cup of avocado oil
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 tbsp. dried parsley flakes
Instructions
- Prehead your oven to 400 degrees.
