What ingredients are needed to make these Salted Chocolate Covered Peanut Butter Date Bites?

Some of these you may already have on hand, but if not, they are very easy to find! I order quite a few of my items from Thrive Market. Dates – For this recipe I like to use large Medjool dates. You can purchase them pre-pitted or you can just pop them open and remove the dates yourself. 

Peanut Butter – Use a natural and creamy smooth peanut butter. The more runny it is, the easier it is to spread. You want a peanut butter that doesn’t have any added sugars in it.

Peanuts – I chop the peanuts pretty small and they add the perfect crunch on top!

Chocolate – I prefer dark chocolate, but you can definitely swap semi sweet or milk chocolate as well. 

Coconut Oil This will help your chocolate harden back up and make it silky smooth to drizzle.

Salt The magic sprinkle that ties it all together. It is the best way to balance the sweetness of the chocolate and dates. I prefer Celtic Salt as it has minerals in it that just add an extra benefit. Any good flaky sea salt will work though.

How to make Salted Chocolate Covered Peanut Butter Date Bites…

Prep your baking pan with your parchment paper laid out on it. Gather all of your ingredients.
Melt your chocolate and coconut oil together. You can do this on the stovetop in a double broiler or in the microwave, stirring every 15 – 30 seconds.

Spread out a thin layer of chocolate on your parchment paper. About an 8 x 8 square roughly.

Open your dates to where they are basically open faced, still connected on one side and lay them side by side on the chocolate.

Gently spread your peanut butter over your dates.

Drizzle the rest of your chocolate over the top of your peanut butter. You can spread it to cover it completely or you can let peanut butter peak through.

Sprinkle your chopped peanuts on top and finish off with the salt.
Place in the fridge for several hours or overnight to firm up.
Cut up into the desired size and Enjoy!

Ingredients

  • 1/2 cup dark chocolate chips
  • 1/2 tbsp. unrefined coconut oil
  • 12 pitted dates
  • 1/4 cup unsweetened peanut butter
  • 2 tbsp. chopped cashews
  • 1/2 tsp. Celtic salt

Instructions

  1. Prep your baking pan with your parchment paper laid out on it. Gather all of your ingredients.
