You guys, we are smack in the middle of blackberry season around here and I am not wasting a single minute of it! This blackberry crisp recipe is one I make on repeat if I can beat my kids to the blackberries — juicy, jammy blackberries baked under a buttery oat crumble topping that turns golden and crackly in the oven. It’s the kind of dessert that makes the whole house smell incredible, and it comes together with ingredients you probably already have sitting in your pantry.
The kiddos love picking out the biggest, juiciest berries for this one (and eating a few straight off the bushes or snatching them off the counter — I won’t judge, I do it too!). Serve it warm with a big scoop of vanilla ice cream melting right into it, and you will wonder why you didn’t start making this every week.

Why you’ll love this recipe:
- It’s ridiculously simple. No fancy techniques here — just fresh berries, a handful of pantry staples, and one baking dish. If you can stir and sprinkle, you can make this.
- That crumble topping. Cold butter cut into the oat mixture gives you those little crumbly, buttery pockets that turn golden and crisp in the oven. It’s one of the best parts, in my opinion, at least!
- It’s amazing with ice cream. Warm blackberry crisp with a scoop of homemade vanilla ice cream melting over the top is about as good as dessert gets.
- You can use any berry you have. Blackberries are our favorite, but this recipe is forgiving — swap in blueberries, raspberries, or a mix of whatever you’ve got on hand.

What ingredients are needed for this blackberry crisp recipe?
Here’s everything you’ll need. Nothing complicated, I promise!
- Fresh blackberries (4 cups): The star of the show! Fresh is best if you can get your hands on them this time of year, whether that’s picking your own or grabbing a container at the store. The note on my recipe card says you can really use any berry here, so don’t stress if blackberries aren’t available.
- All-purpose flour (used in both the filling and the topping): A little flour in the berries helps thicken up all that juice as it bakes, and flour in the topping gives the crumble its structure.
- Vanilla extract: Just a teaspoon, but it makes the berries taste even more like themselves.
- Old-fashioned or instant oats: This is what gives the topping that classic, hearty crisp texture. I order mine from Thrive Market, but you can absolutely find them at the regular grocery store too.
- Brown sugar: Sweetens the topping and helps it turn that deep golden color as it bakes.
- Cinnamon: A little warmth that pairs so well with the berries.
- Celtic salt: Just a half teaspoon to balance out all that sweetness and really let the berry flavor come through. This is the clean salt I always keep stocked in my kitchen.
- Butter, cold and cubed: The key to a good crumble topping! Keeping the butter cold is what gives you those little crumbly pockets instead of a mushy topping.
- Oil or butter for the dish: Just enough to keep everything from sticking.
I order quite a few of my items from Thrive Market. They make it easy to find clean ingredients and ship straight to my door. Tools you may need:
- 8×8 or 9×9 baking dish: These are the best baking dishes!
- Mixing bowl: I love these glass bowls!
- Pastry cutter (optional): This is a great tool to have ! — a fork or even just your fingers works great too!
- Measuring cups and spoons: This is a great stainless steel set!
How to make blackberry crisp:
Preheat your oven to 350°F and lightly spray or butter your baking dish (an 8×8 or 9×9 works great).
Right in the baking dish, combine your blackberries, flour, and vanilla extract. Give everything a good stir so the berries are evenly coated — this helps thicken all that gorgeous berry juice while it bakes. One less bowl to wash, so I’m not complaining!

In a medium to large mixing bowl, add your oats, brown sugar, flour, cinnamon, and Celtic salt. Mix it all together until it’s evenly combined.

Cut in your cold, cubed butter using your fingers, a pastry cutter, or the back of a fork. You’re looking for small, pea-sized crumbs — this is what gives the topping that perfect crumbly texture once it bakes.

Sprinkle the crumble mixture all over the top of the berries, covering them evenly.

Bake at 350°F for 35-40 minutes, until the topping is golden and the berries are bubbling up around the edges. The hard part is leaving it be long enough to cool just a little!
Serve it warm or cold — but I have to tell you, it is amazing served warm with a scoop of vanilla ice cream on top. You are good to go!

FAQs:
Can I use frozen blackberries instead of fresh?
You can! No need to thaw them first — just know the filling may release a little extra juice as it bakes, so you might add a few extra minutes to the bake time to let things thicken up.
Can I use a different berry?
Absolutely — this recipe is very forgiving. Blueberries, raspberries, or a mix of berries all work beautifully with the same topping.
Do I need to do anything special to the blackberries before using them?
Just give them a good rinse and pat them dry. No peeling or seeding needed — the seeds are totally fine to eat and you won’t even notice them once it’s baked.
How do I store leftover blackberry crisp?
Cover and store it in the fridge for up to 4 days. It reheats really well in the oven or microwave — just add a fresh scoop of ice cream on top!
Can I double this recipe?
Yes! Just use a 9×13 dish and double all the ingredients. You may need to add a few extra minutes to the bake time.
