This Chocolate Chia Pudding is easy, healthy and tasty and is packed with protein! It is a great option for a sweet treat and something you can feel good about snacking on or giving to your kids.

What ingredients are needed to make this ?

Some of these you may already have on hand, but if not, they are very easy to find! I order quite a few of my items from Thrive Market. Chia Seeds Make sure to use the whole chia seed. You don’t want ground ones or it won’t set properly into a pudding. You need the whole ones to be able to absorb the liquid for the creamy pudding texture.

Maple Syrup – This is what is used for a natural sweetener, and it adds a very subtle maple flavor.

Milk of Choice – You can use whatever milk you’d like. We use whole milk because that is what we keep on hand.

Cacao Powder This will be an unsweetened cacao powder. This is what gives this chia pudding its yummy chocolate flavor.

Vanilla – This adds a really nice depth of flavor to anything chocolate!

Celtic Salt or Sea Salt – Using a good quality salt (we always have Celtic Salt on hand) will help balance the flavors while adding more minerals to your pudding.

Protein Powder (optional) This is another option to add in another layer of chocolate and add more protein to your chia pudding. It is optional but is a great way to make this a high protein treat!

How to make…

As always, it makes things easier if you have all of your ingredients out and ready to go.
Add your milk, (the less milk, the thicker the pudding, this is a personal preference) raw cacao powder and protein powder if using into a mixing bowl. Mix well. The cacao can take time to incorporate into the milk, but if you keep whisking, I promise it will. If you have a frothing whisk, I love using this for a quick mix, the frothing whisk will help the cacao and protein powder mix much faster into the milk but it’s not a must have.
Once your cacao and protein powder is mixed into the milk well (no dry clumps and it will basically look like chocolate milk) then you can add in your vanilla, salt, maple syrup and chia seeds.
Whisk this all together well to get all of the chia seeds mixed in.
Pour into your storage container(s) and place in the refrigerator. 
This step is not necessary, but I try to mix it once more about 30 minutes later (if I remember) to help the chia seeds to not clump up. If you forget though, no worries, I forget half the time too. You will just need to give it a good mix/stir before you eat it to make sure the chia seeds are not clumped up and the milk is incorporated evenly.
Once it has set in the refrigerator for 3 – 4 hours it will be ready to go. I typically make mine the night before so it is just ready the next day, but it totally can be made same day!
Enjoy it by itself or topped with fruit, granola, berries, fresh whipping cream, the options are endless!

How To Store?

Store in an airtight container in the refrigerator for up to 5 days.

Can I use any type of milk?

Yes, whatever is your preference. I use whole milk because that is what we drink but you can use what you like. It may change the flavor a bit depending on the milk of choice. 

How do I serve Chia Pudding?

You can eat it straight off the spoon, sprinkle it with granola, add your favorite chopped nuts, fresh berries, whipping cream or even make it into a fun parfait!

Ingredients

  • 4 tbsp. Chia Seeds
  • 2 tbsp. Maple Syrup
  • 1 - 1/4 cup Whole Milk (or milk of choice)
  • 2 tbsp. Raw Cacao Powder
  • 1 tsp. Vanilla Extract
  • 1/4 tsp. Celtic Salt or Sea Salt
  • 1 Scoop Chocolate Protein Powder (optional)

Instructions

  1. Add your milk, (the less milk, the thicker the pudding, so this is a personal preference) raw cacao powder and protein powder (if using) to your milk in a mixing bowl and whisk well. Or this is when you can use the handheld frothing whisk to incorporate the powders into the milk. Make sure you have no dry clumps.
  2. Add in the rest of your ingredients, vanilla, salt, maple syrup, and chia seeds.
  3. Whisk all of your ingredients together to mix in the chia seeds well.
  4. Pour into your storage containers and place in the refrigerator.
  5. If you think about it after about 30 minutes, give it another quick stir. No worries if you miss this step though.
  6. Store in the refrigerator for 3 - 4 hours or overnight to let the chia seeds absorb the liquid.
  7. If it needs a quick stir before serving (if the milk and chia seeds are at all separated) just give it a quick mix once more.
  8. Enjoy it by itself or topped with fruit, granola, berries, fresh whipping cream, there are so many fun options!
