The kiddos and I love our muffins, and these Cinnamon Sugar Muffins do not disappoint! They are tender and full of cinnamon flavor, which is the best, in my opinion, this time of the year.

Muffins are one of my favorite things to have on hand for a quick grab for a snack.

What ingredients are needed to make these Cinnamon Sugar Muffins?

Some of these you may already have on hand, but if not, they are very easy to find! I order quite a few of my items from Thrive Market. Flour – I typically use a bread flour because that is what I have on hand, this is the one we use. But you can definitely use an All-Purpose flour too!

Sugar The sugar will be used for both the muffins and cinnamon sugar topping.

Cinnamon The star of the show!

Baking Powder Always amazing in baking for a fluffy texture. Be sure to grab an aluminum free one.

Milk – You can use what you have on hand. We use whole milk around here.

Avocado Oil – Just be sure to use a neutral oil without a taste.

Vanilla Extract Extra flavor that just adds that extra something.

Salt – We always keep Celtic Salt on hand, the salt helps to balance all of the flavors. 

Eggs – A typical baking staple in our muffins. 

Vanilla Protein Powder – This is optional, but I always try to get extra protein in where I can.

How to make Cinnamon Sugar Muffins…

The easiest way to get started as always is to gather all your ingredients. Having everything out and ready to go makes baking and cooking so much easier. You can go ahead and prep your muffin pans here too and preheat the oven to 375 degrees.
We are jumping to the end first, go ahead and mix together your cinnamon and sugar for the topping and set that aside so it is ready to go when you are.
Ok, for the muffin batter. Add your wet ingredients into your mixing bowl, your sugar, milk, avocado oil, eggs and vanilla. Mix well.
Then add in your cinnamon, baking powder, salt and protein powder if using and mix those in as well.
Finally add in your flour. Mix well. 

Wet Batter for Cinnamon Muffins

Scoop a single scoop of your batter into each muffin tin.
Once you get all of the batter in the muffin tins, take the cinnamon sugar mixture that you put together first and sprinkle it over the top of each of the muffins.

Bake at 375 for 15 – 18 minutes or until your toothpick comes out clean.
Once they are done, let them cool for a few and enjoy!!!

How To Store?

Store in an airtight container for up to 5 days.

Do these freeze well? 

Yes! Once they have cooled, line them on a baking tray and freeze them for about an hour, then you can put them in a freezer safe bag and freeze for up to 3 months.

Cinnamon Sugar Muffins

Ingredients

  • 2 1/4 cups of all-purpose flour
  • 1 cup of raw cane sugar
  • 1 tbsp. ground cinnamon
  • 2 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 cup avocado oil
  • 1 cup milk
  • 2 eggs
  • 1 scoop of vanilla protein powder
  • 2 tbsp raw cane sugar
  • 1 tsp cinnamon

Instructions

  1. Gather your ingredients, prep your muffin pan and preheat your oven to 375 degrees.
  2. Take your 2 tbsp. of raw cane sugar and 1 tsp. of cinnamon and mix together to set aside. This will be used to top your muffins before you bake.
  3. Add your wet ingredients, your sugar, milk, avocado oil, eggs and vanilla to your mixing bowl. Mix well.
  4. Then add in your cinnamon, baking powder, salt and protein powder if using and mix those in.
  5. Finally add in your flour, mix well but try not to overmix.
  6. Scoop a single 3 tbsp. scoop of your batter into each muffin cup.
  7. Once you get all of your batter divided out into your muffin pan, sprinkle your cinnamon sugar topping onto the muffin batter. You can use as much or little as you like.
  8. Bake at 375 for 15 minutes or until a toothpick comes out clean.
  9. Enjoy!!!
