How to make…

I love simple recipes like these! Let’s get cooking!
Gather and wash all of your fresh produce.

Cook your pasta to your likeness. You want to do this a little ahead of time to give it time to cool some. You can drizzle it with olive oil so it doesn’t stick together.
Cut and prepare your lettuce, cucumbers, tomatoes and artichoke hearts. And you can go ahead and shred your parmesan cheese.

Add everything into a bowl. Yup, just toss it all in. Super simple. 
Don’t forget to squeeze in the juice from the lemon and add in a little of the brine from the artichoke hearts!

Once everything is in the bowl, as well as your dressing, just mix it all together!
You can eat it immediately or you can store it in the fridge to chill.

FAQs

How To Store?

It is best eaten immediately or same day after it has chilled. Our family will eat on it though for up to three days and it still tastes fabulous! The lettuce is the only thing that will lose its spunk after a day or so, but still tastes amazing!

Can I add protein to make it a meal?

Definitely!!! It is AMAZING with steak, grilled chicken and shrimp!

Caesar Salad Pasta Salad

Two salads in one! This Caesar Salad Pasta Salad is the perfect combination between two favorites. It has the creaminess from the Caesar dressing and parmesan cheese and the perfect crunch from the cucumbers, tomatoes and lettuce while adding a fun twist with the pasta!

Ingredients

  • 4 cups of chopped Romaine lettuce
  • 16 oz. of your favorite pasta
  • 1 cup quartered cucumbers
  • 1 cup quartered cherry tomatoes
  • 1/2 - 1/3 cup grated parmesan cheese
  • 1/2 - 1 cup chopped artichoke hearts (plus 2 tbsp of the brine)
  • 1 lemon, juiced
  • Caesar Dressing - Choose your favorite!

Instructions

  1. Gather and wash all of your fresh produce.
  2. Cook your pasta to your likeness. You will want to do this a little ahead of time to give your pasta time to cool off just a bit. You can drizzle olive oil on it to prevent it from sticking.
  3. Cut and prepare your lettuce, cucumbers, tomatoes and artichoke hearts. You can also go ahead and shred your parmesan cheese.
  4. Add everything into a bowl. Yup, just toss it all in.
  5. Squeeze in the juice from a lemon and add in the brine from the artichoke hearts.
  6. Add in your dressing and toss everything together.
  7. Enjoy!!!!
